Here is One of our favorites: It’s called STUFF (Thanks One Deal at a Time!)
Take a bunch of potatoes, slice them real thin, I like to use a mandolin. I have even used left over baked potatoes from the night before.
While you are slicing, melt an entire stick of butter in a very large pan, cast iron is the best. Then add an entire sliced onion. If you cook the onions down until they are clear the kids will eat them.
Like I said you can eat it just like this as a side dish with some ketchup, or add some meat to it and make it a meal or even eat it in a tortilla as you are running out the door to baseball practice.
Do you make something similar? What do you call it?

I grew up eating this and now make it for my family…we call it “taters-n-onions”. Mom always used leftover bacon grease, but we use olive oil instead of the butter – turns out great every time. Kids like to cover theirs with ketchup, I like mustard, hubby likes ranch dressing drizzled over it. 🙂

I make a recipe we call cheesy noodles and sausage…
I know… original.
But yeah basically the name says it all…
boil up some egg noodles and chunk up some smoked sausage into the noodles so they can boil along with them…
in a sauce pan melt some butter, add some flour, allow the flour to brown (you’re making a rue here)
Then add velveeta cheese and milk to form a cheese sauce.
drain noodles/sausage and add to a 13×9 pan.
pour cheese sauce on top and mix it all up.
bake for oh… I dunno… 20 mins on 350.
I like to add some kraft singles on top if I have them around.
Its really fast and honestly you can even skip the oven part if you wanted and just dish into bowls after mixing your cheese sauce in with your noodles.
