So what to do with Mountain Dew??

Apple Dumplings

2 Granny Smith apples
2 cans crescent rolls (coupon HERE)
2 sticks butter
1 1/2 cups sugar
1 teaspoons vanilla
cinnamon
1 small can Mountain Dew (coupon HERE)

Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

This is what they look like if you crank your head sideways…. They are awesome!! Especially with some Blue Bell!

STOP. Whatever you are planning on making for dinner, if you have these 4 ingredients you HAVE to make these biscuits tonight!! I made these the other night and I am still a ROCK STAR with my family! They were AWESOME!! If you have a Popeye’s in your area these taste just like the biscuits from that drive-through! There is a new coupon for the Bisquick HERE. Thanks MyLitter.

I could seriously eat an entire pan with butter and jelly.

7 UP (or Sierra Mist) Biscuits
2 cups Bisquick (coupon HERE)
1/2 cup sour cream
1/2 cup 7-up
1/4 cup melted butter

Cut sour cream into biscuit mix, add 7-Up. Makes a very soft dough.
Sprinkle additional biscuit mix on board or table and pat dough out. Melt 1/4 cup butter in a 9 inch square pan. Place cut biscuits in pan and bake at 450 degrees until golden brown.

You will NOT be sorry!

I am headed up to the store like most of the country soon and found some awesome ideas as to what to do with these fun marshmallows!

First, I think I am going to make some pumpkin cupcakes or spice cake, I know I have a mix, which ever it is for! I am going to use the fancy Jet-Puffed marshmallows to put on the top like the picture below.

I have always wanted to make a Sweet Potato Pie. I make pumpkin and pecan of course, but with the marshmallows on top, browned like this, it looks delish!

This recipe is from Rachel Ray, and you can see it HERE.

INGREDIENTS

1/2 pkg. (14.1-oz.) refrigerated piecrust (coupon HERE)
2 sweet potatoes (about 1 lb.)
1 cup buttermilk
3 eggs, lightly beaten
3/4 cup packed brown sugar
1/4 tsp. salt ( Coupon HERE)
1 bag (10 oz.) marshmallows (1-inch size) ( Coupon HERE)
1 1/2 cups mini marshmallows (about 3 oz.)

DIRECTIONS:

Position a rack in the center of the oven and preheat to 350°. Unroll the piecrust into a 9-inch pie pan; crimp the edge and prick the bottom all over with a fork. Cover the crust with a sheet of foil and fill it with dried beans or other pie weights. Bake until the crust edge is just dry and lightly colored, about 10 minutes. Remove the foil and beans.
Meanwhile, pierce the sweet potatoes in several places. Microwave on a paper towel, turning once, until they are easily pierced with a fork, about 7 minutes. Let cool, then peel. Using a food processor, pulse the sweet potatoes until smooth. Blend in the buttermilk, then add the eggs, brown sugar and salt and pulse until combined, about 30 seconds. Pour the filling into the prepared crust. Bake the pie until the center is just set and puffed and the pastry is golden, about 50 minutes.
Preheat the broiler. Cover the top of the pie with the large marshmallows, mounding them in the middle; fill the empty spaces with the mini marshmallows. Place the pie on a baking sheet and broil until browned, less than a minute. Turn off the broiler, close the oven door and leave the pie in the oven until the marshmallow topping just softens, about 3 minutes. Transfer to a rack to cool slightly.

Wow, it just gets better and better!! I promise I will make these in the next 2 days and give you a review, although I am FREAKING out by looking at them, that I have not made them before! Seems like a PERFECT combination!

Ingredients

2 1/4 cups all-purpose flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking powder ( coupon HERE)
1/2 teaspoon baking soda
1/2 teaspoon salt ( coupon HERE)
1 cup (2 sticks) butter or margarine, softened
1 cup granulated sugar
1 can (15 ounces) LIBBY’S® 100% Pure Pumpkin
2 large eggs
1 teaspoon vanilla extract
2 cups (12.5 ounces) NESTLÉ RAISINETS Milk Chocolate-Covered Raisins coupon HERE
1 cup chopped walnuts
Vanilla Glaze (recipe follows)

Directions

PREHEAT oven to 375° F. Grease baking sheets.COMBINE flour, pumpkin pie spice, baking powder, baking soda and salt in medium bowl. Beat butter and sugar in large mixer bowl until creamy. Beat in pumpkin, eggs and vanilla extract. Gradually beat in flour mixture. Stir in Raisinets and nuts. Drop by rounded tablespoon onto prepared baking sheets.

BAKE for 15 to 20 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle or spread with Vanilla Glaze.

FOR VANILLA GLAZE:
COMBINE 1 cup powdered sugar, 1 to 1 1/2 tablespoons milk and 1/2 teaspoon vanilla extract in small bowl; mix well.

I have not seen this coupon for a little while, a $.40 No Yolk noodle coupon. I personally am going to use this coupon at Randalls because it will double to $.80, these are priced at around $1.50 so I should get a bag of noodles for really cheap. Randalls also has their rotisserie chickens for about $5, this will make for a very good and cheap meal tonight before we go Trick Or Treating! Go HERE to get your coupon, I used 77477.

Chicken Noodle Soup

Ingredients

2 tablespoons extra-virgin olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 medium carrots, cut diagonally into 1/2-inch-thick slices
2 celery ribs, halved lengthwise, and cut into 1/2-inch-thick slices
4 fresh thyme sprigs
1 bay leaf
2 quarts chicken stock
8 ounces dried wide egg noodles ( use $.40 coupon HERE)
1 1/2 cups shredded cooked chicken ( can use Quick Fix chicken coupon HERE, 77477)
Kosher salt and freshly ground black pepper
1 handful fresh flat-leaf parsley, finely chopped
Salt to taste ( coupon HERE)

Directions

Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the chicken stock and bring the liquid to a boil. Add the noodles and simmer for 5 minutes until tender. Fold in the chicken, and continue to simmer for another couple of minutes to heat through; season with salt and pepper. Sprinkle with chopped parsley before serving.

The following are my families favorite 3 recipes for pork loin. My kids also love each of these recipes.

This is our favorite!

Pulled Pork Sandwiches
1 Pork Loin
1 Bottle Bar B Que Sauce ( I use Sweet Baby Rays)
Little bit of liquid smoke
Rolls

Brown all sides of the roast in some oil in a large pan. Transfer to a crock pot and add about a cup or two of water. Salt and pepper to taste. Cook on high for 4-6 hours until you can pull it apart without effort with a fork. Drain off almost all the liquid, leave about 1 cup add about 1t. liquid smoke to it. Add an entire bottle of B-B-Q sauce, we love Sweet Baby Ray’s the best. Stir it into the meat, turn down to low on crock pot and let cook fro another hour or until you are ready to eat. Serve on hard rolls or your favorite kind!

Chili VerdeThis is exactly how my mom gave it to me. I have never used a 3-5 lb pork, mine are usually between 1-3 pds so I only use 1 onion and 1-2 cans of green chili’s. I use about 2 tsp of garlic though and I usually skip the searing and make it in the crockpot. About 6 hours on high in a crockpot, 2 1/2-3 hours in a roasting pan, and 1 hour in a pressure cooker.3-5 lb boneless pork roast
1-3 yellow onions (chopped)
4 cans Ortega chopped green chili’s
olive oil
1/4 tsp minced or chopped garlic
(more if you like garlic)
salt and pepper to taste
2 Tbs flour
3/4 cup waterHeat oil in roasting pan and sear meat. Pour 1/2 cup water in bottom of roasting pan. Place in roast, chopped onions, garlic, salt and pepper. Cover pan and bake at 350 degrees 2 hours or until internal temp. reaches 155 (or meat shreds easily with a fork). Let meat set 1/2 hour and then shred. Set aside.
Take 2 Tbs flour and mix with 1/4 cup water thoroughly (no lumps). Add water to drippings and cook over med heat to make gravy. If desired add more water, flour and (if needed) chicken bouillon for more gravy. Salt to taste. Add green chile’s and shredded meat. Serve over rice.
My kids like it with soy sauce and rice. The next day we wrap it in burritos with cheese and sour cream. The burritos are excellent when fried in a pan on both sides, more sauce dumped on top and coated in cheese. (not healthy though). Enjoy!
