Do you have a spare box of Thin Mint Cookies laying around? Turn those delicious cookies into something even better (if that’s even possible right?) with this super easy Thin Mint Truffles Recipe. When it’s that time of year to buy cookies, buy a couple extra boxes and freeze them so you can create amazing dishes like this throughout the year. This recipe will make 16 truffles, so great for a party dish too.
INGREDIENTS:
1 sleeve of Girl Scout Thin Mint Cookies
2 oz of softened cream cheese
1 cup of dark chocolate morsels
Sprinkles or Candy Melt (optional)
DIRECTIONS:
- Place cookies in a food processor and process until finely chopped
- Mix the chopped cookies and cream cheese with a fork until thoroughly mixed (may need to use your hands to mix)
- Form cookie mixture into 1 inch balls and place into refrigerator for approximately 30 minutes
- Put chocolate in a microwave safe dish and heat for 30 seconds to 1 minute, stir until all chocolate is evenly melted
- With a toothpick, dunk cookie balls into melted chocolate and place on a sheet of wax paper and embellish with sprinkles
- Allow chocolate to harden and enjoy!!
